Fill The Freezer
The freezer is a great tool to help us succeed. On our journey, we have learned to love the freezer for giving us the ability to make quick meals, with great ingredients that last forever.
Here’s how we keep ours stocked.
Veggies- Always in the freezer. Quick to cook stovetop or in the microwave in a rush, amazing seared on the stovetop or grilled.
The trick to making bland veggies great? Searing them over high heat! It brings their natural sweetness out and gives them great texture. We do this on the grill, on the griddle, on the stovetop. This little method change will make your veggies go from bland to awesome.
The journey we are on requires a lot of veggies in our bodies. They help us feel satisfied, help our bodies function better, and they give us nutrients.
Super Quick and Flavorful
Great on eggs, alone, or tossed with rice.
We LOVE the fire-roasted option that Costco offers. We also buy the Normandy mix from Costco. Costco does a great job with organic offerings and product quality. Most veggies get frozen right at or near the farm at the peak of freshness, so don’t fret if you cannot find these specific ones.
In a hurry to pack for work? Toss some frozen in a ziploc bag and then heat them up with your lunch in the microwave.
Fruit- If there is one thing that helped us during this journey it was looking forward to our after dinner snack of fruit and yogurt. Frozen fruit is easy to keep and relatively priced. It’s available everywhere too. Trader Joe’s, Target, Costco, Publix, Winn Dixie, Whole Foods, Aldi, all have great frozen fruit available. We love the ones that have bananas in the mix (Whole Foods/Target both carry a Strawberry Banana and the brand Wegman’s has a Berry Banana mix that is really good).
We usually set it out while making dinner so that it thaws out by dessert, then we add cinnamon and yogurt and enjoy. We can’t emphasize how much cinnamon adds to this dish.
Bananas going bad? Freeze them to enjoy later as dessert. You can process frozen bananas in a processor and it has the texture of sorbet. Add cinnamon and a little sugar free peanut butter to it for a nice, healthy treat.
Got some ripe peaches going bad? Freeze them too. Serve some yogurt and use a microplane to grate the frozen fruit onto the yogurt. Mix w cinnamon and enjoy this awesome treat.
