Equip The Kitchen
The first step is to prepare our kitchens and remove what we call “barriers to entry”. Set yourself up for success by having it all ready to go. We don’t want the fact that all the cutting boards are dirty to derail our cooking success.
We need to start with all the basics in the kitchen. The purpose here is not to sell you equipment, so we will simply recommend what you need, except in the rare cases the brand is particularly important.
Your well stocked kitchen should have:
A Sharp Knife
Buy a decent knife. Not an expensive one, but a decent one. Make sure it is sharp. There is nothing more dangerous than a dull knife. One chef's knife does it all, but if you want a more complete set, add a serrated knife and a paring knife. Whatever you buy, make sure it is sharp and stays sharp. A dull knife slides off the food and becomes an easy way to get cut.
Skillets
At minimum, have two nonstick skillets. We are not here to sell specific brands, so just buy two good non-sticks and take care of them. If you have non-sticks and they are showing any signs of damage to the surface, throw them out. Use silicone or wood tools/tongs only to prevent scratching. All non-sticks are designed to work in MED heat, no higher. Give it time to warm up before you add the food. A minute or two.
Cutting Boards
Plural. Buy several. They are not expensive, and we use them a ton. Buy them, small (4x6) and large (8x11). Buy a few of each so that you always have a clean one ready.
Cooking Tools
A few good spatulas, turners, and tongs. All silicone so you don’t ruin your nonstick. There is nothing a spatula cannot do in the kitchen and the are cheap. Use the to mix ingredients, turn meats and veggies in the skillet, and plate food when it is ready. It is the swiss army of the kitchen, and alongside a good pair of tongs, it is all you need in the kitchen to succeed.
Something to Sear- a solid cast iron pan or griddle/grill that you place on your burners or a good gas bbq. Anything that will let you caramelize your veggies and meats amd that you can use in any weather.
Extras- nice to haves but not crucial include a Microplane grater, a mandolin, and a food processor/blender.
